Break the eggs into a container discarding the yolks (keep only 2 yolks or prepare the quiche with only the whites).

Beat the eggs with a pinch of salt, black pepper and saffron to taste.

Roll the remaining ingredients to fill the quiche: 5 mushrooms, 8 cherry tomatoes and 2 strips of red pepper.

Place the ingredients in the form of silicone or other material, as long as it is non-stick and fill with beaten eggs.

Take to a preheated oven at 180º until cooked.

Unmold and serve in individual slices.
Note: this recipe is for 8 slices of quiche. A single serving equals 2 slices.
