Preparation Instructions
Please note that this recipe requires the previous day to soak the cashews in water (8 hours minimum).
For mass:

Add the ingredients one by one in the following order: 4 1/2 c. coconut oil soup (heated), skimmed cocoa powder, coconut sugar, cassava cornmeal, baking soda, salt to taste and the 3 egg yolks.

Mix everything well until you get a dough with texture of "plasticine".

Roll and cut into 24 portions or crackers.

Place on an oven tray (lined with parchment paper or on a silicone mat).

Bake in preheated oven at 180 ° C, about 10 min.

When the biscuits are cooked, remove from oven and place on a rack to cool to crisp.
For the filling:

Place the cashews, 1 and a half teaspoons of coconut oil (heated), 6 teaspoons of honey, and 1 and a half teaspoons of water in a food processor and mix well for a few minutes until smooth.

Put the stuffing in a pastry bag and put about 30 min in the fridge (while the cookies cool).
For Assembly of Wafers:

Use two crackers, put filling and close like a sandwich.
Note: This recipe gives 12 stuffed cookies. One single serving is equal to 1 stuffed crackers.
