This recipe is intended to approximate a typical orange cake but with healthier ingredients. The only sugars are from the fruit and a little bit of honey. Although honey is rich in sugar, it can have some properties such as minerals beneficial to health and used in small quantities will not cause problems.

Heat the oven to 180ºC.

Line a baking pan with baking paper.

In a blender, place the eggs and the orange in segments (shelled and without pits). Add the oat flakes, honey and coconut oil.

Transfer the contents of the blender to a container and add the flour.

Finally, add the yeast, stirring constantly.

Put the dough in a pan and bake for about 25 min. It is ready to serve.
Note: this recipe makes 8 slices of cake. An individual serving equals 1 slice.
