I decided to make this ice cream, which besides being tasty is very healthy. It is an ice cream prepared only with fruit and honey. Blueberries and raspberries are fruits with great nutritional properties and should, like other red fruits, be part of our diet.

Preparation Instructions

Note that this recipe requires pre-freezing the red fruits.

For the Cashew Cream:

Put the cashews (preferably pre-soaked), the water, the squeezed lemon juice and the salt in a blender or processor and grind very well until you get a homogeneous cream.

Add the remaining ingredients and beat for another 2 min.

For Ice Cream (with machine):

Pour the preparation into the machine and follow the manufacturer's instructions. After being consistent, place in the freezer.

Remove from freezer 15 min before serving.

For Ice Cream (without machine):

Pour the preparation into a glass container with a lid and place in the freezer for 15 min.

Remove and, with the help of a fork, stir the ice cream, breaking the crystals that have formed in the meantime. Put it back in the freezer.

Repeat this process every 15 min, stirring with the fork, until the cream is completely frozen and you are unable to place the fork.

Remove from freezer 15 min before serving.

Note: this recipe is for 12 scoops of ice cream. An individual dose is equivalent to 2 balls.
