Preparation Instructions
This recipe requires 4 hours of refrigeration before serving. It is best to do it the day before and leave a night in the fridge to gel well.

Set aside some fruit to use at the end for topping.

Using a food processor, mash remaining fruit until mashed and set aside.

Moisturize the gelatin leaves in very cold water (add a few ice cubes), wait for them to soften

Drain the gelatin leaves, place in a glass jar, add some of the puree and microwave until completely melted. Add the mixture to the remaining cold fruit puree and mix well.

Apart, beat the cream with xylitol in an electric mixer until thick.

Also mix by wrapping the fruit puree to the previous mixture, set aside a little to use as a sauce at the end.

Put the final preparation in a silicone form and refrigerate about 4h until solid.

To unmold, place the mold into a hot water bath just seconds. Unmold and garnish with fresh fruit you set aside cut out.
Note: This recipe gives for 8 slices. One single serving equals 1 slice.
